Originally built in 1845 as a sawmill, the Brush Mill in Chester, Connecticut, operated in that capacity until 1859, when it was converted into a brush-making factory. The historic property found new life in 1976 as a restaurant—one of several to inhabit the space over the years. In 2021, under new ownership, it was reimagined and renamed The Brushmill by the Waterfall. To honor its rich heritage while breathing new life into the interior, the new owners enlisted Caryn Paradis Interior Design. Paradis retained original features—such as ceiling-mounted pulleys and wheels from the building’s industrial past—while elevating the space to reflect the culinary ambitions of the new team.
Today, The Brushmill by the Waterfall presents five unique dining experiences, ranging from a relaxed tavern to an elegant formal dining room, including a private Chef’s Table for up to twelve guests.
